Michael Ungaro, CEO of the California-based San Pedro Fish Market and star of the Amazon Prime docuseries “Kings of Fi$H”, knows a thing or two about rebounding, pivoting and surviving as a modern-day restaurateur. His family’s decades-old business has weathered two evictions and relocations, a pandemic, sudden family losses and the joys (read: challenges) of temporarily operating out of parking lots with tents, mobile units and the works. Here, he shares his top tips for breaking out of the old-school operator mindset – and leveling up as a media-savvy, well-connected industry leader.

“Your story makes you more compelling to customers than just the items on your menu. Try using live video to show the day-to-day behind-the-scenes. People love that.”
“Don’t be afraid to ask for help – even with social media. You need to be able to delegate stuff out before you can elevate.”
“If you’re just starting out, test your concept and menu with a catering operation or a ghost kitchen before you sign a lease. Then you’ll already have an established brand and a customer base when you do open your own space.”
