San Pedro Fish Market's Lights Out Shrimp Tray

by Michael Ungaro from Food Fanatics® Magazine

The seafood trays at San Pedro Fish Market are more than a meal — they are a performance that has also gone viral.

The concept of the tray “all came about when we tried to invent a way to do a seafood fajita, or just start barbecuing fish,” says Michael Ungaro. “We thought, let’s let people pick out whatever fish they want and we’ll cook it for them. We’ll serve it on trays. Now we even ship them fresh – not frozen – to customers around the world from our website.”

The trays may have started small, but now they come overflowing with griddled, heavily spiced shrimp, bell peppers, onions and diced red potatoes, and topped with optional add-on seafood such as steamed whole lobster, king crab legs, octopus or salmon.

Smaller trays feed four to six people (or a really hungry person or couple), while the larger, “superfood” trays feed even larger groups.

The Ungaro family wouldn’t disclose what’s in the super-savory, slightly smoky spice blend they use – and pair with gobs of butter for their shrimp and veggies. However, the ingredients list on their retail spice blend mix label includes paprika, salt and dehydrated garlic and unnamed spices that others have guessed to be some Old Bay, oregano, chili powder, and maybe dried basil and thyme.

The fun doesn’t end there. All trays come with corn on the cob and a split loaf of crispy, chewy garlic bread for spooning and mopping. Guests can also enjoy San Pedro Fish Market’s signature hot sauces in original, habanero and jalapeño flavors – also available retail.
