Why Indian Fusion Is Taking Over Menu Mashups

The mashup era is in full swing—and that includes Indian fusion. Chefs and culinary creators are blending Indian flavors with everyday menu staples like pizza, loaded fries and wings. With 30% of U.S. consumers saying they love or like Indian cuisine, according to Datassential, there’s plenty of room for these craveable creations to grow.

Indian Loaded Fries Bring Tikka Masala to Comfort Food

Tikka masala remains a familiar favorite in Indian cuisine. More specifically, paneer cheese tikka masala has grown a whopping 1,750% on menus nationwide, according to research firm Datassential. Tikka masala is traditionally made with charred, marinated chicken folded into a creamy tomato curry flavored with garam masala, ginger, gari and warm Indian spices. It’s often served with rice and naan.

But at the multi-unit Mazala Pizza, with locations in Illinois and California, tikka masala gets loaded onto classically prepared French fries, along with crushed samosa, onions, cheese, sev—a crunchy Indian snack made from seasoned chickpea flour— along with mint and tangy tamarind chutney.

Tikka Masala and Butter Chicken Pizza Variations

Mazala Pizza also tops its pizza with variations of tikka masala, including a vegetarian-friendly and very trendy paneer tikka masala.

Why Butter Chicken Continues to Grow

Butter chicken, in general, has been growing on menus nationwide, with 59% of consumers interested in trying it, according to 2026 menu trends research from Datassential. Butter chicken is a rich, bright yellow, creamy North Indian curry traditionally made with chicken marinated in yogurt and simmered in a tomato-butter sauce, flavored with warm spices and aromatics like garam masala, turmeric, cumin, coriander, ginger, garlic and onion.

Curry Wings Put an Indian Spin on a Bar Favorite
