Mental Mise en Place: Daily Habits for Stronger Kitchen Leadership

3 Practices for Better Teams

Leaders who take care of themselves are better equipped to support their teams.

1. Morning Centering

Take five minutes before service to set intentions, visualize the shift and ground yourself before the day begins.

Mise: Set up their stations and take a few quiet, deep breaths together as a group.

2. Pre-Service Check-In

Do a quick mental scan: How am I feeling? What do I need? What does my team need from me today?

Mise: Post the Brain States chart and use it as a daily team check-in tool.

3. Energy Management

Recognize your limits, and make choices that preserve your ability to lead effectively throughout the shift.

Mise: Cross-train staff, so there’s always someone to step in for every position when a break or reset is needed.
