Valerie Rubin is the Food Fanatic Chef of Sustainability & Specialty Diets and has been with US Foods since 2011. She has over 20 years of restaurant experience in front and back of house and has spent much of that time honing her education and skill in the foodservice sustainability and specialty diets fields. She lives in Southen Californa with her fiance and 5 dogs and spends her free time working with local restaurants and events spaces to create craft beverage programs and working with under-resourced culinary youth programs in her area.
