Wise Quacker Pizza

Ingredients

  • 60 g
    Grapeseed Oil
  • 60 g
    Ginger, grated
  • 36 g
    Garlic, grated
  • 160 g
    Low-Sodium Soy Sauce
  • 80 g
    Rice Wine Vinegar
  • 80 g
    Sugar
  • 225 g
    Fermented Black Beans, rinsed, soaked overnight, drained
  • Duck Fat or additional Grapeseed Oil
  • 3 ea.
    Large Onions, sliced as needed
  • 20 g
    Hoisin, plus extra for garnishing
  • 5 g
    Toasted Sesame Oil
  • Gluten-Free Pizza Dough
  • 70 g
    Fresh Mozzarella
  • 100 g
    Duck Confit, your recipe
  • 75 g
    Banh Mi Vegetables, recipe follows
  • Cilantro Leaves, as needed

Preparation

In a small rondeau, heat grapeseed oil and sweet ginger and garlic until translucent and tender. Add soy sauce, vinegar, sugar and fermented black beans. Cook until beans are tender and sauce is thick. Set aside.

Heat duck fat or any fat and caramelize onions until deep brown. Add 20 grams of hoisin and sesame oil. Set aside.

Dollop 40 grams of fermented black bean sauce around the pizza dough. Tear the fresh mozzarella into pieces no larger than the tip of your thumb, and spread evenly on dough followed by 35 grams of caramelized onion and duck confit. Bake at 650°F for 3 to 4 minutes. Top with vegetables, drizzle with hoisin and garnish with cilantro.

To make banh mi vegetables:
Julienne 80 grams of daikon radish and 80 grams of carrot and combine with 5 grams of thinly sliced and seeded serrano pepper. Add 5 grams of sugar and 3 grams of salt, and let sit for 10 minutes. Cover with enough rice wine vinegar, and macerate overnight at room temperature.
