Watermelon and Arugula Salad

Ingredients

  • 4 oz.
    Watermelon, seedless
  • 3 oz.
    Baby Arugula
  • 1 oz.
    Red Onion, sliced
  • 2 oz.
    Cross Valley Farms® Apple Pineapple Pico de Gallo
  • 3 oz.
    Quinoa Vegetable Blend
  • 1 oz.
    Vinaigrette Dressing
  • 1 ea.
    Monogram® 32 oz. E-Z Eat Bowl

Preparation

Trim and dice the watermelon into ½-inch cubes. Take one slice of the red onion and cut in half. Place the arugula, quinoa blend, watermelon and sliced red onion into a mixing bowl. Drizzle the dressing into the mixing bowl and toss until lightly coated. Place the mixed salad into a clean and dry bowl. Garnish with the apple pineapple pico de gallo. Serve.
