16 oz.Ricotta Cheese

1 cParmesan, grated

1.5 TSesame Oil

16 oz.Mozzarella Cheese, shredded

Whole Basil Leaves, fried, for garnishing

Kosher Salt and Pepper, to taste

Curly Lasagna Noodles, cooked as needed
Preparation
Heat olive oil in a Dutch oven and sauté garlic, herbs and chili until fragrant and add ground pork, breaking apart and cooking through.
Add tomato paste, soy sauce, unagi, red wine vinegar, sugar and MSG. Simmer for a few minutes, adding water if necessary. Season with salt and pepper to taste.
Meanwhile, combine ricotta with Parmesan, miso and sesame oil. Season with salt and pepper for taste.
Trim lasagna noodles to fit desired pan size. Layer by starting with meat sauce, pasta, mozzarella and a few spoonsful of ricotta mix. Repeat to each 6 layers, ending with cheese. Bake in a preheated 350°F oven until cheese melts and lasagna is heated through. Slice to desired size. Garnish with fried basil.
