Vegan Spring Vegetable Wrap

Ingredients

  • 1/2 c
    Glenview Farms® Vegan Mozzarella Style Shreds
  • 1 ea.
    Hilltop Hearth® Tomato Basil Wrap
  • 2 oz.
    Cucumbers, julienne
  • 2 oz.
    Cross Valley Farms® Cherry Tomatoes, sliced
  • 1 ea.
    del Pasado® Half Avocado, sliced
  • 1 oz.
    Cross Valley Farms Red Onion, diced
  • 2 oz.
    Monarch® Corn and Poblano Pepper Blend, heated and cooled
  • 1 leaf
    Cross Valley Farms Romaine, picked and cleaned
  • 2 oz.
    Monarch Chateau Classique Dressing

Preparation

  1. In a large mixing bowl, combine cucumbers, corn, onions and tomatoes. Toss with Chateau Classique dressing until fully dressed.
  2. Using the chickpea wrap, assemble with cleaned romaine lettuce, cucumber mixture, vegan mozzarella style shreds and sliced avocado. 
  3. Fold wrap, cut in half and serve.
