Vegan Ranchero Wrap

Ingredients

  • 1 ea.
    Hilltop Hearth® Tomato Basil Wrap
  • 3 oz.
    Plant-Based* Pork Al Pastor
  • 1½ cups
    Cross Valley Farms® Chopped Romaine Lettuce
  • ½ cup
    Fried Kale
  • 1 oz.
    Tomato, diced
  • 1 oz.
    Chef's Line® Hummus
  • 1 oz.
    Monarch Fire-Roasted Corn, Pepper, Poblano and Onion Blend
  • 1 oz.
    Monarch® Lightly Fried Crispy Crinkle-Cut Onion
  • ¼ ea.
    Avocado
  • ¼ tsp.
    Monarch Coarse Kosher Salt
  • 3 oz.
    Creamy Garlic Dressing

Preparation

  1. On the flattop, add the al pastor meat and cook until hot with crispy edges.
  2. In a bowl, toss together romaine, corn and poblano blend, tomato, crispy onions, salt and avocado.
  3. Warm chickpea wrap, and lay flat on a rolling surface.
  4. Spread hummus in the center of the wrap, and top with al pastor, the romaine mixture and fried kale (recipe here).
  5. Wrap all the ingredients into the chickpea wrap, burrito style.
  6. Serve with a side of creamy garlic dressing.
