Vegan Pho Dumpling Soup with Mushrooms Recipe

Ingredients

  • 4 ea.
    Pacific Jade® Vegetable Mushroom Pho Potstickers
  • 2 ea.
    Cross Valley Farms® Cremini Mushrooms, thinly sliced
  • 6-8 oz.
    Molly's Kitchen® Vegetable Soup Base, reconstituted
  • 1 tsp.
    Cross Valley Farms Peeled Shallots, shaved or minced
  • .25 tsp.
    Cross Valley Farms Peeled Garlic
  • .5 ea.
    Fresh Lime
  • Fresh Jalapeño or Serrano, for garnish
  • Fresh Basil, for garnish
  • Fresh Mint, for garnish

Preparation

  1. Cook pho potstickers according to package instructions. Remove from heat and hold warm.
  2. Add shallots, garlic and mushrooms to pan, and sauté until fragrant. Deglaze with vegetable stock.
  3. Add pho potstickers, and taste broth. Adjust seasoning as need.
  4. Place into a warm bowl, and garnish with fresh herbs, lime wedges and chili crisp.
