Vegan Mac and "Cheese" Sauce

Ingredients

  • 6 lb.
    Glenview Farms® Vegan Cheddar Style Slices
  • 2 gal.
    Thirster® Unsweetened Coconut Milk
  • 1 c
    Monarch® Corn Starch
  • 2 oz.
    Monarch Garlic Powder
  • 1 oz.
    Monarch Ground Mustard
  • 2 oz.
    Monarch Kosher Coarse Ground Salt
  • 2 tsp.
    Monarch Ground White Pepper

Preparation

  1. In a large sauce pot, over medium heat, add coconut milk and bring to a simmer.
  2. While whisking, slowly add in slices of the vegan cheese.
  3. In a separate bowl, combine equal parts water and cornstarch to create a slurry.
  4. Add the slurry into the vegan cheese sauce mixture; whisk well, making sure slurry is fully incorporated, and bring to a simmer.
  5. Once sauce has thickened, remove from heat and add the seasonings.
  6. Mix well and toss with your favorite pasta.
