5 oz.Monarch® Cheddar Sour Cream and Chive Potato Tots

2 oz.Stock Yards® Beef Tenderloin Tips

1 oz.Patuxent Farms® Applewood Smoked Bacon Cooked, roughly chopped

3 tsp.Glenview Farms® Sour Cream

½ tsp.Cross Valley Farms® Chives, chopped

½ tsp.Cross Valley Farms Green Onion, slivered

¼ tsp.Ancho Chili Flakes

Salt and Pepper, to taste
Preparation
- Beef tenderloin tips can be sautéed or deep fried to your liking.
- Deep fry potato tots until golden brown.
- Arrange potato tots, beef and bacon on ¼-sheet pan or suitable vessel.
- Place under a salamander or into a convection oven to desired color.
- Garnish on a platter with a few dollops of sour cream, chives, green onion and a sprinkle of ancho chili Flakes.
