Tomato Basil Gazpacho Recipe

Ingredients

  • 1 can
    Monarch® Balsamic Herb Marinated Sliced Tomatoes
  • 1 ea.
    English Cucumber, seeded, rough chopped
  • 1 c
    Cross Valley Farms® Red Onion, rough chopped
  • 1 c
    Red Bell Pepper, rough chopped
  • .5 c
    Fresh Cilantro, Basil or Italian Parsley
  • Cross Valley Farms Rainbow Radish Assortment, for garnish

Preparation

Combine all ingredients, except radishes, into a container and use an immersion blender. Purée to desired consistency. Taste and season with salt and pepper. Hold in refrigeration. Taste again before service and adjust as needed.

For Service: Ladle cold soup into a cold bowl, and top with diced or sliced radish, cucumber slices and extra virgin olive oil.
