1 tsp.sumac, or to taste

1 tsp.Za’atar, or to taste

¼ tsp.dried oregano, or to taste

¼ cupextra-virgin olive oil

¾ tsp.kosher salt and freshly ground black pepper, or to taste
Preparation:
Mix together all the ingredients except for the oil, salt and pepper. Drizzle in oil, toss well to combine. Season with salt and pepper and adjust seasonings as needed.
Chill for at least two hours or overnight. Serve cold. Makes about 7 cups (6-8 servings).
