Tart Cherry Tabbouleh

Ingredients

  • 2 cups
    tart cherries, pitted and halved
  • 2 bunches
    bunches Italian parsley leaves, minced
  • ¼ cup
    Minced mint leaves
  • ½ cup
    minced mint leaves
  • ½ cup
    diced Roma tomatoes
  • 1 cup
    minced Persian (or seedless) cucumber
  • ¼ cup
  • 1 cup
  • 1 teaspoon
    sumac, or to taste
  • 1 teaspoon
    Za’atar, or to taste
  • ¼ teaspoon
    dried oregano, or to taste
  • ¼ cup
    extra-virgin olive oil
  • ¾ teaspoon
    kosher salt and freshly ground black pepper, or to taste

Preparation:

Mix together all the ingredients except for the oil, salt and pepper. Drizzle in oil, toss well to combine. Season with salt and pepper and adjust seasonings as needed.

Chill for at least two hours or overnight. Serve cold. Makes about 7 cups (6-8 servings).
