Sweet and Spicy Pickled Rainbow Radishes

Ingredients

  • 3 ea.
    Cross Valley Farms® Rainbow Radish Assortment
  • 3/4 c
    White or Rice Wine Vinegar
  • 3/4 c
    Water
  • 3 tbsp.
    Monarch® Sriracha Hot Honey
  • 2 tsp.
    Monarch Kosher Salt

Preparation

  1. Cut off tops and bottoms of radishes; peel. Thinly slice and place into quart container. 
  2. In a small sauce pot, combine vinegar, hot honey and salt. Simmer to dissolve salt, and pour over the radishes. Let sit in refrigeration for 12-24 hours before serving. 

Consider adding aromatics and spices to enhance flavor: Red pepper flakes, coriander seeds, garlic cloves, shallots, fennel and mustard seed.
