Steakhouse Potato and Lobster Hash

Ingredients

  • 1 ea.
    Cross Valley Farms® Russet Idaho Potato, baked, roughly chopped into 1-inch pieces
  • 1 T
    Garlic-Infused Oil
  • 4 oz.
    Harbor Banks Lobster Meat, roughly chopped
  • 2 oz.
    Roasted Peppers, julienned
  • 2 oz.
    Cross Valley Farms Onions
  • 2 c
    Cross Valley Farms Stemmed Spinach
  • 2 oz.
    Grated Hard Cheese, such as Grana Padano
  • 1 tsp.
    Chopped Fresh Herbs (equal amounts of parsley, thyme and rosemary)
  • 1 oz.
    Monarch® Garlic Aioli

Preparation

Deep fry the torn Cross Valley Farms Russel Idaho Potato pieces until brown and crispy.

Sauté the Harbor Banks Lobster, peppers, and onions in the garlic oil.

Combine the fried potatoes with the lobster, peppers, onions, spinach, cheese and herbs.

Mound the hash in a serving bowl and drizzle with the Monarch Garlic Aioli.
