1 ea.Chef's Line® Basque Cheesecake

2 cRykoff Sexton® Organic Diced Pineapple

.5 cMonarch® Extra Fine White Sugar

2 tbsp.Glenview Farms® Unsalted Butter
Preparation
- Thaw pineapple and strain. Reserve juice.
- Add Chinese five spice to a sachet. Add water to the reserved pineapple Juice to equal 8 oz. Heat liquid and steep sachet of Chinese five spice for 5-10 minutes. Discard sachet. For a stronger flavor, double the amount of spice.
- Add Butter to a large skillet. Melt over medium-high heat. Add sugar, stir to dissolve and add pineapple. Allow to cook until golden and caramelized.
- Reduce heat. Remove pineapple and hold.
- Return butter and sugar mixture to the heat, and add 3 tbsp. of Chinese five spice tea. Stir to combine. Bring to a boil; reduce to a simmer. Stir while allowing sauce to reduce until thickened.
To Plate; Place spiced pineapple reduction onto a plate. Add Basque Cheesecake, and top with Caramelized Pineapple.
