5 EachCross Valley Farms Yukon Gold Potatoes Size C, roasted

1 teaspoonMonarch Kosher Salt

3 OuncesChef's Line Crème Fraîche

2 teaspoonsCross Valley Farms Fresh Chive, minced
Preparation
- Preheat a deep fryer to 350°F.
- Using fully cooked but chilled Yukon gold potatoes; place potatoes on sheet pan and using a spatula, press down on each potato to flatten.
- Once potatoes are flattened, place into deep fryer, a few at a time.
- Remove potatoes from fryer and lightly season with kosher salt while they are still warm.
- Garnish with smoked trout, Crème Fraîche and chopped chives.
