Smashed Yukon Gold Potato with Smoked Trout

Ingredients

  • 4 Slices
    Chef's Line Smoked Norwegian Trout
  • 5 Each
    Cross Valley Farms Yukon Gold Potatoes Size C, roasted
  • 1 teaspoon
    Monarch Kosher Salt
  • 3 Ounces
    Chef's Line Crème Fraîche
  • 2 teaspoons
    Cross Valley Farms Fresh Chive, minced

Preparation

  1. Preheat a deep fryer to 350°F.
  2. Using fully cooked but chilled Yukon gold potatoes; place potatoes on sheet pan and using a spatula, press down on each potato to flatten. 
  3. Once potatoes are flattened, place into deep fryer, a few at a time. 
  4. Remove potatoes from fryer and lightly season with kosher salt while they are still warm.
  5. Garnish with smoked trout, Crème Fraîche and chopped chives.
