Shrimp Diablo

Ingredients

  • 8 ea. Harbor Banks® 31-40 Ct. Tail-On Peeled & Deveined Shrimp
  • 4 oz. Enchilada Sauce
  • 4 oz. Glenview Farms® Monterey Jack Cheese Blend
  • 1 T Cross Valley Farms® Chopped Cilantro
  • 6 ea. del Pasado® 6” tortilla

Preparation:

  1. Sauté shrimp
  2. Deglaze pan with enchilada sauce
  3. Pour into an oven-safe container and top with cheese
  4. Melt cheese until golden brown
  5. Top with chopped cilantro and warm tortillas
