Ingredients

2 ea.Large Sweet Potatoes, par-boiled and peeled

1 ea.Small Onion, finely chopped

1 ea.Small Tomato, finely chopped

1 ea.Green Chili, finely chopped

¼ cCilantro Leaves, chopped, plus extra for garnish

1 TTamarind Chutney
-
1 TMint Chutney
-
½ tsp.Chaat Masala
-
½ tsp.Roasted Cumin Powder

2 TRoasted Peanuts, crushed

Kosher Salt, to taste

Cooking Oil, as needed
Preparation
Cube sweet potatoes; set aside. Heat oil over medium heat, and fry golden brown and crispy; drain.
Combine sweet potato with onion, tomato, green chili and cilantro, and toss with chutneys.
Sprinkle in chaat masala, cumin and salt. Mix well and transfer to serving bowls. Garnish with peanuts and more cilantro, if desired.
