Seared Tuna Ceviche

Ingredients

  • 1 package Harbor Banks® Seared Sliced Tuna
  • Monarch® Pickled Red Onions
  • Cross Valley Farms® Chopped Cilantro
  • Lemongrass Vinaigrette
  • 2 oz. Lemongrass
  • 2 oz. Cross Valley Farms Onion
  • 2 T Monarch Honey
  • 8 oz. Roseli® Extra Virgin Olive Oil

Preparation:

  1. Defrost tuna with puncture internal bag
  2. Make lemongrass vinaigrette
    •     In a blender, add onion, lemongrass, honey and water
    •     Slowly purée until smooth
    •     Slowly drizzle oil to create emulsification
  3. Plate tuna, garnish with pickled red onions and chopped cilantro
  4. Pour lemongrass vinaigrette tableside
