Monarch® Pickled Red Onions

Cross Valley Farms® Chopped Cilantro

Lemongrass Vinaigrette

2 oz. Lemongrass

2 oz. Cross Valley Farms Onion

2 T Monarch Honey
-
8 oz. Roseli® Extra Virgin Olive Oil

Preparation:
- Defrost tuna with puncture internal bag
- Make lemongrass vinaigrette
- In a blender, add onion, lemongrass, honey and water
- Slowly purée until smooth
- Slowly drizzle oil to create emulsification
- Plate tuna, garnish with pickled red onions and chopped cilantro
- Pour lemongrass vinaigrette tableside
