Preparation
Hydrate the chia seeds in 6 cups of cold water for 30 minutes, stirring occasionally until a gel-like texture forms. Lightly crush half of the blueberries to release their flavor. Mix the kombucha, sparkling water and crushed blueberries in a large container and chill for 1 hour. Stir in the hydrated chia seed mixture until well distributed. Portion 4 ounces into each cup and garnish with fresh blueberries and mint.
