1 ea.Cross Valley Farms® Yellow Onion, small dice

0.5 tsp.Cross Valley Farms Garlic Cloves, minced

2 ea.Jalapeño, seeded and diced

1.5 to 2 cMonarch® Au Jus Mix, reconstituted

2 cdel Pasado® Fire Roasted Diced Tomatoes

0.75 cRoseli® Tomato Paste
-
2 cMonarch Tomato Sauce

4 cMonarch Red Kidney Beans, drained and rinsed

2 cdel Pasado Black Beans, drained and rinsed

2 TMonarch Ancho Chili Seasoning
Preparation
- Cook prime rib according to package instructions. Cool and cut into bite-sized pieces.
- In a large stockpot, heat the oil and pot to medium-high heat. Add the diced onion, minced garlic and diced jalapeño to the heated oil and sauté for 2-3 minutes. Cook until the onions are translucent.
- Add the diced tomatoes, tomato paste, tomato sauce and au jus to the stockpot. Add chili beans and Ancho Seasoning Blend. Bring to a boil, reduce to a simmer.
- Add the chili seasoning mix and stir to combine all of the ingredients. Simmer for 20-30 minutes. Taste and adjust seasonings. Add in prime rib and cook until heated through.
