Poached Lobster Tail

Ingredients

  • 2 ea. Harbor Banks® Lobster Tail
  • 4 oz. Chef’s Line® Compound Butter
  • 8 oz. Cross Valley Farms® Salad Blend
  • 1 Lemon
  • ¼ tsp. Monarch® Salt
  • ¼ tsp. Monarch Black Pepper

Preparation:

  1. Poach lobster in boiling water for 3 minutes
  2. Sauté greens and season with lemon, salt and pepper
  3. Plate lobster tail on top of sautéd greens
  4. Pour melted compound butter on lobster tails
