1.5 oz.Tequila Blanco

5 oz.Grapefruit Liquor

1 oz.Housemade Grapefruit Cordial, recipe follows

Sparkling Soda, as needed
Preparation
To make grapefruit cordial: Peel entire grapefruit for bar garnishes, and juice using a centrifuge to clarify fresh (the juice will turn completely clear).
Add the grapefruit peels, sugar to taste, a dash of pea blossom powder and sous vide for 2 hours; strain, bottle and refrigerate (pea blossoms add back the pink color we clarified out).
Combine tequila, liquor and cordial, and pour into a tall glass. Top with soda. Makes 1 drink.
