Mozzarella Stuffed Meatloaf

Ingredients

  • 1-1/2 lb.
    Cattleman’s Selection® 80/20 Ground Beef
  • 1/4 c
    Pacific Jade® Panko Breadcrumbs
  • 1/4 c
    Beef Stock
  • 1 ea.
    Egg, beaten
  • 2 T
    Monarch® Worcestershire Sauce
  • 2 T
    Monarch Ketchup
  • 2 tsp.
    Monarch Italian Seasoning
  • 1 tsp.
    Kosher Salt
  • 1/4 tsp.
    Monarch Black Pepper, ground
  • 1 tsp.
    Monarch Granulated Garlic
  • 1 tsp.
    Monarch Onion Powder
  • 4-8 oz.
    Roseli® Premium Mozzarella Cheese Loaf, sliced
  • 2/3 c
    Monarch Ketchup
  • 1/2 c
    Roseli Diced Tomatoes, 1/4"
  • 2 T
    Monarch Brown Sugar

Preparation

In a bowl, mix together the beef, breadcrumbs, stock, eggs, Worcestershire sauce, ketchup, Italian seasoning, salt, pepper, garlic and onion until well combined. Remove half the meat from the bowl and shape it on a prepared pan or loaf pan. Place the mozzarella slices down the center, leaving about 1/2 inch around the sides. Place the remaining meat on top and shape into a loaf, making sure to seal the edges. For the sauce: Stir together the tomatoes, ketchup and sugar until smooth. Pour over the meatloaf. Bake at 375°F for about 45 minutes or until done.
