Mojo Pork Rice Bowl

Ingredients

  • 10 lb.
    Mojo Pork Shoulder
  • 5 lb.
    Jasmine Rice
  • 19 ea.
    Limes
  • 6 lb.
    Sweet Plantains
  • 32 oz.
    Pickled Red Onions
  • 13 ea.
    Fresh Oranges
  • 25 ea.
    Avocado Halves
  • 8 oz.
    Chopped Cilantro

Preparation

1.        Cook rice; add zest and juice of 12 limes.

2.        Heat mojo pork.

3.        Fry plantains until golden.

4.        Grill halved oranges.

5.        Quarter remaining limes.

6.        Build bowls: lime rice → mojo pork + juice → plantains → avocado → grilled      orange → cilantro → lime squeeze.
