2 ea. Harbor Banks® Lobster Tail

4 oz. Chef’s Line® Mayo

2 oz. Monarch® Mirepoix

4 ea. Hilltop Hearth® Parker House Rolls

1 Lemon, juiced

1 tsp. Monarch Dill
Preparation:
- Poach lobster tails and chop into 1-inch pieces
- Mix lobster with mayo, lemon juice, dill and mirepoix
- Toast Parker House rolls
- Cut a slit into top of Parker House rolls and fill with lobster salad mix
