Lemon and Romano Penne

Ingredients

  • 4 oz.
    Roseli® Penne Pasta, cooked al dente
  • 1 ea.
    Chef's Line® All Natural* Uncured Smoked Chicken Sausage
  • ½ cup
    Broccoli Rabe, blanched and cut 1" pcs.
  • ½ cup
    Wild Mushrooms, sliced
  • 2 oz.
    Roseli® Romano Cheese, grated
  • ½ tbsp.
    Rykoff Sexton® Extra Virgin Olive Oil
  • 4 oz.
    Glenview Farms® Heavy Cream
  • 1 tbsp.
    Shallot, chopped
  • 1 tsp.
    Lemon Zest
  • 1½ tsp.
    Lemon Juice
  • Salt and Black Pepper, to taste

Preparation

  1. Grill smoked chicken sausage, and slice into .25"-thick bias "coins;" hold hot.
  2. In a hot sauté pan, add oil, mushrooms and shallots, and lightly brown. Add broccoli, smoked chicken sausage, lemon, and finish with heavy cream.
  3. Bring sauce to a simmer, and then add cooked pasta and romano**
  4. Reserve small amount for garnish, and heat through.
  5. Season and garnish with reserved Romano and charred lemon slice.
