1 bagMonarch® Fire Roasted Corn and Poblano Pepper Blend

8 oz.Roseli® Shredded Low-Moisture Whole Milk Mozzarella

1/2 cHarvest Value® Mayonnaise

1 TSugar

4 oz.Scallion, thinly sliced
Preparation
Sauté the Corn and Poblano Pepper Blend just until it reaches 165°F. Remove from heat to cool. Fold in all other ingredients and refrigerate for service. During service, take a 6 oz. ladle of the mixture and place in a small cast iron skillet, rarebit dish or something similar. Bake in a 400°F oven for about 10 minutes or until hot, bubbly and lightly browned. Garnish with more scallion or fresh chopped parsley. Serve hot as an appetizer with fresh vegetables or chips for a delicious shareable.
