Hunter's Sauce

Ingredients

  • 24 oz.
    Stock Yards® Tomahawk Steak
  • 4 T
    Unsalted Butter, divided
  • 3 ea.
    Crimini Mushrooms, medium, thinly sliced
  • 1 T
    Peeled Shallots, minced
  • .5 c
    White Wine
  • 1 tsp.
    Tomato Paste
  • .25 c
    Demi-Glace
  • 2 tsp.
    Italian Parsley, minced
  • To Taste
    Black Pepper
  • To Taste
    Kosher Salt

Preparation

Hunter's Sauce (serves 4: 2 oz.)

  1. Melt 1 T butter in a sauté pan.
  2. Add mushrooms and sauté until beginning to caramelize. Add in shallots, and sweat until transluscent.
  3. Deglaze pan with wine and simmer until reduced by half. 
  4. Add in tomato paste and demi-glace, bring to low simmer. 
  5. Whisk in remaining butter, 1 T at a time. Taste and adjust seasoning with salt and pepper. 
  6. Finish with minced parsley.

  1. Season steak with salt and pepper, and sear. Cook for a few minutes per side, depending on the thickness of the steak; turn and cook until desired doneness is almost reached.
  2. Transfer to a carving board and let rest for 5-10 minutes.
  3. Once rested, serve topped with Hunter's Sauce.
