24 oz.Stock Yards® Tomahawk Steak

4 TUnsalted Butter, divided

3 ea.Crimini Mushrooms, medium, thinly sliced

1 TPeeled Shallots, minced

.5 cWhite Wine
-
1 tsp.Tomato Paste

.25 cDemi-Glace
-
2 tsp.Italian Parsley, minced

To TasteBlack Pepper

To TasteKosher Salt
Preparation
Hunter's Sauce (serves 4: 2 oz.)
- Melt 1 T butter in a sauté pan.
- Add mushrooms and sauté until beginning to caramelize. Add in shallots, and sweat until transluscent.
- Deglaze pan with wine and simmer until reduced by half.
- Add in tomato paste and demi-glace, bring to low simmer.
- Whisk in remaining butter, 1 T at a time. Taste and adjust seasoning with salt and pepper.
- Finish with minced parsley.
Tomahawk Steak: Shop This Item
- Season steak with salt and pepper, and sear. Cook for a few minutes per side, depending on the thickness of the steak; turn and cook until desired doneness is almost reached.
- Transfer to a carving board and let rest for 5-10 minutes.
- Once rested, serve topped with Hunter's Sauce.
