Hummus with Tropical Pineapple-Avocado Relish Recipe

Ingredients

  • 450 g
    Garbanzo Beans
  • ½ c
    Water
  • 100 g
    Tahini
  • 1 ea.
    Large Clove Garlic, shaved with micro plane
  • 1½ tsp.
    Ground Cumin
  • ½ tsp.
    Ground Coriander
  • ½ tsp.
    Ascorbic Acid
  • 1 tsp.
    Paprika
  • 1 c
    Extra-Virgin Olive Oil
  • Juice of 1 Lemon
  • Kosher Salt, to taste
  • Tropical Pineapple-Avocado Relish - Recipe below
  • Crackers and Erudite, as needed

Preparation

Blend together all hummus ingredients, plate on a shallow bowl, mound relish on top and accompany with crackers and erudite.

To make Tropical Pineapple-Avocado Relish: Combine ½ cup of extra-virgin olive oil with ½ c each of grilled red bell pepper, avocado, grilled pineapple and grilled red onion all diced small; ½ cup of chopped cilantro; ¼ cup of lime juice and ¼ cup of sherry vinegar. Adjust seasonings with kosher salt.
