4 oz.Monarch® Green Chickpeas

1 oz.Chili Lime Sauce

1/4 TMonarch Roasted Garlic Aioli

2 cMonarch Fine Kosher Salt
-
1/2 cMonarch Spice Oregano

As NeededTequila
-
As NeededChips, Tortilla White Corn Salted Triangle
Preparation
Dressing:
- Place the chili lime sauce in a bowl.
- Add the garlic aioli to the sauce and mix well. If consistency needs to be thicker, add more aioli. Reserve in a squeeze bottle and use as needed for plate up.
Tequila Salt:
- In a bowl, add the salt and oregano. Mix.
- Add the tequila until the salt resembles "wet sand"; amounts will vary.
- Spread the salt thin and evenly on a full-sized sheet pan lined with parchment paper.
- Place on top of a oven or warm dry area till dry.
- Crumble in a bowl with hands and store.
Plate up:
- Place warmed crispy chickpeas in a vessel of your choice.
- Drizzle some of the dressing and sprinkle some of the salt.
- Surround the dish with the chips.
