4 oz.Grilled Watermelon

1 oz.Shallot Vinaigrette

2 oz.Arugula

2 oz.Burrata

Kosher Salt and Freshly Ground Pepper, taste

Smoked Barbecue Seasoning, your choice
Preparation
Sprinkle barbecue seasoning on watermelon, char on grill and slice as desired. Combine with tomatoes and toss with half of vinaigrette. Toss arugula in remaining vinaigrette; set aside. To plate, place burrata in serving bowl and surround with watermelon and tomatoes. Top with arugula and season with salt and pepper.
