5 lb.Monarch® Green Chickpeas

3 oz.Monarch Kosher Salt

1.5 oz.Monarch Black Pepper Ground

8 oz.Cross Valley Farms® Green Onion, chopped

as neededRoseli® Canola Oil Olive & Oil Blend
Preparation
- Allow chickpeas to thaw overnight under refrigeration.
- Using a large stand mixer with a paddle attachment, add chopped onions, salt, pepper and green chickpeas.
- Turn the stand mixer speed to 1, and allow for the chickpeas to combine until they are a rough mashed consistency.
- Once mashed, roll into balls approximately the size of a golf ball.
- Heat a non-stick sauté pan over medium heat. Add enough oil to coat the pan. Place formed chickpea balls into the pan. Do not overcrowd. Using a spatula, flatten them into the pan while cooking.
- Cook on both sides until golden brown and crispy.
