Green Chickpea Fritter

Ingredients

  • 5 lb.
    Monarch® Green Chickpeas
  • 3 oz.
    Monarch Kosher Salt
  • 1.5 oz.
    Monarch Black Pepper Ground
  • 8 oz.
    Cross Valley Farms® Green Onion, chopped
  • as needed
    Roseli® Canola Oil Olive & Oil Blend

Preparation

  1. Allow chickpeas to thaw overnight under refrigeration. 
  2. Using a large stand mixer with a paddle attachment, add chopped onions, salt, pepper and green chickpeas.
  3. Turn the stand mixer speed to 1, and allow for the chickpeas to combine until they are a rough mashed consistency.
  4. Once mashed, roll into balls approximately the size of a golf ball. 
  5. Heat a non-stick sauté pan over medium heat. Add enough oil to coat the pan. Place formed chickpea balls into the pan. Do not overcrowd. Using a spatula, flatten them into the pan while cooking.
  6. Cook on both sides until golden brown and crispy.
