French Onion Soup with Gruyère Cheese Toast Points

Ingredients

    Glenview Farms® Unsalted Butter
  • 1 bag
    Rykoff Sexton® Caramelized Onions
  • 1 T
    Minced Garlic
  • 1 c
    Dry White Wine
  • 2 bags
  • 2 T
    Monarch® Worcestershire Sauce
  • 2 T
    Cross Valley Farms® Thyme
  • 2 ea.
    Monarch® Bay Leaves
  • 1 ea.
    Chef’s Line French Baguette
  • 1 pack
  • 2–4 c
    Water
  • To taste
    Salt and Pepper

Preparation

  1. Melt butter in a large stockpot over medium heat. Add garlic and sauté for 1 minute until fragrant.
  2. Stir in caramelized onions and cook for 5–10 minutes to warm through and deepen flavor.
  3. Add white wine and simmer for 5 minutes to reduce slightly.
  4. Add chicken demi-glace, water, Worcestershire sauce, thyme and bay leaves. Bring to a boil, then reduce to a simmer for 30–45 minutes. Season with salt and pepper.
  5. Ladle soup into bowls. Top with toasted baguette slices and Gruyère cheese. Broil briefly until cheese is melted and golden.
