Preparation
- Melt butter in a large stockpot over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Stir in caramelized onions and cook for 5–10 minutes to warm through and deepen flavor.
- Add white wine and simmer for 5 minutes to reduce slightly.
- Add chicken demi-glace, water, Worcestershire sauce, thyme and bay leaves. Bring to a boil, then reduce to a simmer for 30–45 minutes. Season with salt and pepper.
- Ladle soup into bowls. Top with toasted baguette slices and Gruyère cheese. Broil briefly until cheese is melted and golden.
