4 oz.Glenview Farms® Applewood Smoked Blue Cheese

2 TGlenview Farms Unsalted Butter, room temperature

1 TFresh Chives, minced

.25 tsp.Monarch Crushed Red Pepper

1 cPacific Jade® Coarse Panko

Preparation
Crust (serves 1)
- Combine all ingredients in a small mixing bowl and fold to combine, being careful not to overmix.
- Place onto cooked steak, and then toast in broiler to caramelize.

- Season filet with salt and pepper, and sear. Cook for a few minutes per side, depending on the thickness of the steak, turn and cook until desired doneness is almost reached.
- Transfer to a carving board and let rest for 5-10 minutes.
- Once rested, serve topped with the Applewood Smoked Blue Cheese.
