16 oz.Monarch® Aegean Greek Vinaigrette

1 oz.Fresh Basil

2 lb.Fresh Ripe Heirloom Tomatoes, chopped

1 lb.Cucumber, sliced

1 ea.Cross Valley Farms® Jumbo Red Onion, sliced

1 lb.Roseli® Premium Shredded Mozzarella Cheese - Whole Milk

2 lb.Sourdough Bread or any day-old bread you have on hand

1 oz.Fresh Basil
Preparation
For the Tomato Vinaigrette: Mix together the diced tomatoes, the Greek vinaigrette and basil with a stick blender, reserve for the salad. You will have more than you need for this recipe.
For the Salad: In a large bowl, mix together heirloom tomatoes, cucumber, red onion, shredded mozzarella, bread and basil. Take reserved dressing and drizzle over the top, and mix. Add dressing to taste.
