Extra Tomatoey Panzanella Recipe

Ingredients

  • 16 oz.
    Roseli® Diced Tomatoes
  • 16 oz.
    Monarch® Aegean Greek Vinaigrette
  • 1 oz.
    Fresh Basil
  • 2 lb.
    Fresh Ripe Heirloom Tomatoes, chopped
  • 1 lb.
    Cucumber, sliced
  • 1 ea.
    Cross Valley Farms® Jumbo Red Onion, sliced
  • 1 lb.
    Roseli® Premium Shredded Mozzarella Cheese - Whole Milk
  • 2 lb.
    Sourdough Bread or any day-old bread you have on hand
  • 1 oz.
    Fresh Basil

Preparation

For the Tomato Vinaigrette: Mix together the diced tomatoes, the Greek vinaigrette and basil with a stick blender, reserve for the salad. You will have more than you need for this recipe.

For the Salad: In a large bowl, mix together heirloom tomatoes, cucumber, red onion, shredded mozzarella, bread and basil. Take reserved dressing and drizzle over the top, and mix. Add dressing to taste.
