6 TMonarch® Ancho Chili Seasoning Blend, divided, 5 and 1

1 ea.Cross Valley Farms® Homestyle Mashed Potatoes

1 gal.Monarch Au Jus Mix

2 ea.Monarch Fire Roasted Veggie Blend
Preparation
- Remove pot roast from packaging. Rub with ancho seasoning. Place in braising pan.
- Prepare au jus according to package directions. Add in 1 tsp. of Monarch Dried Ancho Chili Seasoning to enhance flavor. Add to braising pan with pot roast, cover with foil. Roast according to package instructions.
- Heat fire-roasted veggies in oven at 400°F for 10 minutes. Stir and continue cooking until golden and heated through.
- Heat mashed potatoes according to package instructions. Hold warm for service.
To Plate: Place mashed potatoes into the bottom of a pasta bowl or plate. Top with fire-roasted veggies and sliced or shredded pot roast. Top with au jus and minced cilantro.
