Cherry Pico de Gallo

Ingredients

  • 2 c
    Fresh cherries, pitted, halved
  • 1 ea.
    Jalapeno, seeded, finely chopped
  • ¼ c
    Finely chopped red onion
  • ¼ c
    Roughly chopped cilantro leaves
  • Freshly squeezed lime juice, to taste
  • Salt and freshly ground black pepper, to taste

Preparation:

Gently mix all the ingredients together. Adjust lime juice, jalapeno heat and seasonings as needed. Chill at least one hour before use. Makes about 3 cups.
