2 oz.Matchstick Carrots

1 oz.Sliced Jalapeño

.25 oz.Sliced Scallions

2 oz.Chipotle Aioli

Pickling Liquid:water, rice wine vinegar, sugar, salt, Cilantro Sprigs
PREPARATION
1. Make pickled cucumbers & carrots: boil water, vinegar, sugar and salt; pour over vegetables. Chill 30 minutes.
2. Deep-fry chicken tenderloins.
3. Toast brioche bun.
4. Layer: chipotle aioli → pickled cucumber → chicken → pickled carrots → jalapeños → cilantro → scallions.
