Blueberry Goat Cheese Salmon

Ingredients

  • 2 8-ounce
    wild Alaskan salmon fillets
  • ½ cup
    goat cheese, divided
  • 40
    blueberries
  • 2 tablespoons
    fresh basil, chopped
  • 4 tablespoons
    orange liqueur

Preparation

Broil salmon for 6 to 8 minutes, then top with goat cheese. Return to broiler for about 2 minutes or until goat cheese melts.

In a small saute pan, cook blueberries, basil, and orange liqueur over medium-high heat for 1 minute. Spoon the blueberry-basil mixture over goat cheese and salmon, reserving additional liquid for dipping. Makes 2 servings.
