Bison Loose Meat Sandwiches

Ingredients

    Stock Yards® All-Natural Ground Bison
  • 4
    Cross Valley Farms® Diced Yellow Onion
  • 2 oz
    Monarch® Worcestershire sauce
  • To taste
    Monarch® Kosher Salt
  • To taste
    Monarch® Black Peppercorns, cracked

    Cross Valley Farms® Fresh Jalapeno, sliced thinly
  • 2 lbs
    Chef’s Line® Guacamole
  • 3 lbs
    del Pasado® Queso Fresco Cheese, crumbled
  • 4 oz
    Cross Valley Farms® Cilantro

Preparation

Brown ground bison and onions, making sure to crumble the meat to a fine texture.

Stir in the Worcestershire sauce and cook until all the juice is absorbed into the meat mixture, about 20 minutes.

To assemble, toast cut sides of buns on a flat top until toasted, then top with about 5oz of meat, a dollop of guacamole, sliced jalapeno and crumbled cheese. Yield: 25 portions.
