Preparation
- First, you will need to cut the bread in a v shape from the top and remove some bread to hollow inside of each baguette.
- Filling can be reserved for breadcrumbs.
- Next, spread the spicy mayo evenly on the inside of the baguette, add the sautéed peppers and onions, precooked peppered bacon slices and smoked cheddar cheese slices.
- Place in a 400F° oven for 5 minutes to melt cheese then top with scrambled or fried eggs, drizzle with extra spicy mayo and garnish with chives.
