Chicken & waffles just keeps chugging along as a brunch fave. Even chain restaurants have gotten into the game, making it more mainstream and giving chefs a chance to put their own spins on the classic. The riff at Napa Restaurant Group, which runs four locations in North and South Carolina, features a dusting of Ethiopian berbere spice.

Step-by-Step Chicken & Waffles Recipe

Step 1 – Brine the chicken in buttermilk

The brine also contains a little hot sauce, crushed garlicpeppercorns and thyme for a 48-hour marinade.

Step 2 – Mix the Batter for Extra Crunch

The addition of cornstarchbaking powder and baking soda helps activate the acid in the buttermilk to create more crunch.


Step 3 – Double-Fry for Maximum Crispiness

Blanch the chicken in oil at 325°F; then do a second fry at 350°F until browned and crisp.

Step 4 – Make the Waffles and Seasonings.

These waffles get a dusting of salted berbere spice and a drizzle of hot honey made with garlic, coriander, thyme, bay leaves and Aleppo pepper.
