Chili Seasoned Mini Cauliflower Florets

With more consumers than ever seeking plant-based foods, we set out to create a convenient and easy-to-cook seasoned vegetable option that would be versatile as an ingredient for many menu additions. Our Chili Seasoned Mini Cauliflower Florets are spiced with trendy guajillo pepper, perfect for Mexican dishes like tacos and burritos, but also a versatile enough flavor to stand on its own as a side dish. We explored some of the best Mexican restaurants’ menus for inspiration, and found the pairing of cauliflower and guajillo showed up time and again in vegetarian and plant-based tacos. With that in mind, we chose slightly smaller cauliflower florets that can cook easily in a sauté pan or on a flat top, and mixed them in a bold guajillo pepper seasoning blend. Guajillo pepper provides a fruity, sweet heat with subtle smoky undertones, and a perfect base to finish with a signature sauce or salsa.
