All Natural* Cuban-Inspired Ropa Vieja

Our Cuban-inspired Ropa Vieja (Spanish for “old clothes”) gets its name from the long, strand-like texture in beef that is present after the meat is stewed for hours and then pulled apart. While this dish originated in Spain, it is known as one of the national dishes of Cuba. Historically, this dish is made from flank steak, a previously inexpensive cut of beef with long, tough muscle fibers. Because flank steak has become more expensive, our Ropa Vieja is made with beef chuck, a more affordable cut that still yields the muscle strands typically found in Ropa Vieja. Fully cooked via sous vide to ensure a tender bite and complex flavor, our beef is rubbed with spices and cooked with peppers, onions, diced tomatoes and olives – which, during cooking, creates a delicious sauce. With two large pieces of beef in every package, the meat is tender enough to be easily pulled apart prior to service. Perfect served over rice or with tortillas.
