Pachola Burger

Ingredients

  • 1 ea. Hilltop Hearth® Pub Grain Hamburger Bun
  • As Needed Chef's Line® Chili Lime Sauce
  • 1 ea. Cattleman's Selection® All Natural* Bison Burger
  • 3 oz. Monarch® Green Chickpeas
  • 1-1/2 oz. Shredded Iceberg Lettuce
  • 3 c Monarch Roasted Garlic Aioli
  • 1/2 c Monarch Dried Oregano
  • 3 oz. Avocado pulp
  • 1/2 oz. Monarch Pickled Red Onions
  • To Taste Kosher Salt and Black Pepper

PREPARATION

For the Burger Patty:

  1. Marinate the patty with the chili-lime sauce for 2-4 hours. 
  2. Toast the bun and reserve until patty is ready. 
  3. On a flat top, cook the bison burger to desired temp. (Medium)

For the Oregano Aioli:

  1. In a blender, place the garlic aioli and the oregano and pulse until incorporated and smooth. Place in a squeeze bottle and reserve. 

For the Smashed Green Chickpea Guacamole:

  1. Heat a pot of salted boiling water and make a bowl of ice water, reserve. 
  2. Quickly blanch and cool the green chickpeas. Let drain and place in a bowl.
  3. With a fork, mash the green chickpeas to desired texture. 
  4. Add the avocado pulp and pickled red onion to the bowl and mix well.
  5. Season as needed and reserve.

Plate Up:

  1. Place the bottom bun on a plate. Add some of the garlic aioli and the shredded iceberg lettuce.
  2. Add the cooked bison burger, top with chickpea guacamole and the crispy pickled red onions. 
  3. Finish with the top bun and serve with sides.
