Mixed Berry Shortcake
Ingredients
- 10 lbs. Monarch® Frozen Whole Assorted Berry Blend
- 50 ea. Chef's Line® Buttermilk Biscuits
- Whipped Topping, as needed
- 3 ea. Oranges
- 3 c White Sugar
- 1 lb. Melted Butter
- Fresh Mint Springs, optional
PREPARATION
- Before preparing biscuits according to package, brush with melted butter and sprinkle the tops of the biscuits with a cup of sugar.
- In a large bowl, combine frozen berries, the zest of three oranges and the remaining sugar; mix until combined.
- Place berry mixture in the fridge, and allow for berries to thaw and macerate.
- Once berries have thawed and biscuits have cooled, assemble.
- Slice biscuits in half and fill with the berry mixture.
- Top with whipped topping and the top half of the biscuit.
